In 2016, at just 20 years old, Gianluca founded and began leading the renowned pastry shop Trisolini Dolci Note, already building a remarkable career both in Italy and abroad. Despite his young age, he established himself as a leading figure in the pastry world, showcasing exceptional talent and dedication to his craft.
The name “Dolci Note” was born from the blend of his two passions: music and pastry. Each creation is designed to inspire emotion on the palate, much like music moves the soul.
